Whole Wheat Banana Chocolate Chip Muffins and Zak! Designs Giveaway

I have many cooks in my kitchen, and I can attest that too many cooks in the kitchen can spoil the fun…sometimes! However, I also realize how important it is to give kids the chance to be involved, so I try to accommodate the request whenever I can.

A few weekends ago, my girl wanted to make muffins—and I wanted to try out the gorgeous colorful bowls I am giving away this week. So we tackled a recipe modification, some cooking instructions (really, supervision and answering questions on my part), and trying out these Zak! Designs Confetti Mixing Bowls.

My kiddos gobbled up these muffins —and I have to say, they were really delicious! We swapped out white flour for whole wheat, and added the chocolate chips. You could certainly leave out the chips, or use nuts or dried fruit instead.

Whole Wheat Banana Chocolate Chip Muffins

You will need:

1 cup butter, softened

  • 2 cups sugar
  • 7 large ripe bananas, mashed**
  • 1 ½ teaspoons vanilla extract
  • 4 eggs, slightly beaten
  • 3 cups whole wheat flour
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup chocolate chips

Directions:

Makes 2 ½ to 3 dozen regular sized muffins.

  1. Cream the butter and sugar. Blend in the bananas, vanilla, and eggs.
  2. Whisk together the dry ingredients.
  3. Add to the banana mixture and mix until just combined. Add the chocolate chips. Use a ¼ cup measure to portion the batter for each muffin. Pour into muffin tins lined with muffin papers.
  4. Bake at 350 F. Check after 15 minutes (may take up to 18 minutes). Muffins are done when a toothpick inserted in the middle comes out clean.

**I usually have 1 or 2 bananas that don’t get eaten when they are at their peak, so I throw them in the freezer. When I accumulate 7 of them, I defrost them and make this recipe!

As you can see, my girl used Zak! Designs Confetti Mixing Bowls (set of four) for this recipe, and they were perfect. She was able to use a bowl for each step of the recipe, which kept her organized.

About the Confetti Mixing Bowls:

These bowls are made with recycled melamine showcasing a retro look, inspired by the 50’s. These bowls can be used for mixing batter, serving salads, or even just holding your favorite popcorn. The Confetti Bowls are dishwasher safe, stain resistant (I don’t think you could see a stain anyway!), BPA-free, and lead safe. Not to be placed in the microwave!

My 5 year old is a cupcake girl for sure! We opt for healthier but yummy options when it comes to cupcakes and She gets very excited about baking, I let her do it all even cracking the eggs….. I just lead the way. She is a great baker. :)

My boys love to get on aprons and make a mess with flour, it doesn’t particularly matter what their making – but pancakes are always fun and so forgiving.

My son is a pro at rhubarb crisp & apple crisp, my daughter at chocolate chip cookies and puppy chow and both of them excel at pancakes and French toast. My hubby does the banana chocolate chip muffins:). Those bowls are awesome, would love a set!

My kids love to help me make banana bread. We replace the oil with applesauce, and use Agave instead of sugar. Still tastes great, and the kids love it!

My kids and I make muffins every Sunday morning! We love trying new recipes. These bowls would be great! I’m also lucky to have a 12 year old daughter who loves to bake with her friends when they come over. They of course like to bake cookies :-)

My daughter is 22 now, she has always loved to bake! She has been baking cookies for her teachers, friends & family since she was in grade school! (I think there were 9 different kinds this last Christmas!)

We’ve become more frequent bakers around here, we’ve been making cakes, pies, cupcakes and even tried fudge. They love getting in the kitchen to whip up sweets!

I love baking with my boys. Muffins are always a big hit. We like a recipe that I foun that is called Harvest Muffins. They have zucchini, carrot and apple and are delicious.

Is melamine safe?
