The Dinner Bar: Make Your Own Pizza; Peach & Pudding Parfait

Who doesn’t like pizza?! Maybe you don’t, but for many Americans, pizza is as coveted as apple pie. In this Dinner Bar, you will find that pizza is a vehicle for health and nutrition.
Loaded with veggies and light on fat, this Dinner Bar is super-easy. Best of all, your kids can assemble their favorite ingredients to create the pizza their palate prefers. In our family, we created pizzas that ranged from the basic pepperoni to the “heavy on the veggie” variety!
You will need:
Grains
- 6 pre-made pizza crusts (I used Mama Mia, Thin and Crispy)
Dairy
- Shredded Low Fat Mozzarella cheese
- 2 cups skim milk
- (see protein)
Protein
- Turkey pepperoni
- (see dairy)
Fruit
- Peaches, 1-2” dice

Vegetables
- Spaghetti or Pizza sauce
- Jarred pesto sauce
- Red and Orange pepper, sliced
- Mushrooms, sliced
- Sweet onion, sliced
- Asparagus, cut into 2” pieces
Other
- Instant vanilla pudding mix
Pre-heat oven to 425 F. Wash, slice and dice each ingredient and place into separate bowls.
To make the pizzas: Begin with the pizza crust and place on cookie sheets. Add the base sauce (tomato or pesto), top with cheese and then vegetables. Bake pizzas on the middle rack in the oven for 10-12 minutes or until cheese is melted and bubbly.
To make the parfait: Mix the instant pudding with skim milk, according to package directions. Layer vanilla pudding and peaches in a glass or parfait glass. Top with peaches.

I love the idea of the make your own for kids. I do make your own snacks in elementary schools and they are healthy and the kids love them! Great idea Jill!
